Though restrictions on businesses are starting to ease across the U.S. (and the world at large), the hospitality industry has suffered greatly throughout the coronavirus pandemic. While some restaurants have been able to keep afloat via takeout and delivery, others have been forced to layoff staff or close their doors for good. As countries begin to press play on businesses again after a months-long pause, things are going to look a lot different—at least for a while. Strict social distancing guidelines, rigid sanitation requirements, limited occupancy, masks, and lack of indoor seating are just some of the protocols restaurants and bars will be forced to follow in the wake of COVID-19. For chefs and restaurant owners, this uncertain period has, at the very least, allowed for reflection on the very core of their industry: the food. Here, CR asks some of the industry’s best—from Paris to the Bronx—which meal they’re yearning to eat (or make) post-pandemic.
